As part of our 50th Anniversary, we’d like to share stories that tell the history of our company. In the early 1980s, Elder-Jones was a small, local construction company trying to find direction. At the same time, a local food court restaurant, 1-Potato-2, was expanding rapidly across the Midwest and needed a construction company to expand with it. It was this relationship that helped launch Elder-Jones into the nationwide retail construction industry. Here’s one of our first completed 1-Potato-2 projects at the Burnsville Center, likely around 1980.
